Rosemary Potatoes

A simple and filling side dish.


  • 1lb potatoes
  • 2 tablespoons fresh rosemary (minced)
  • 2 tablespoons avocado oil
  • 1 teaspoon salt


  1. Preheat oven to 425F (220C).
  2. Rinse and dry the potatoes. Cut in half and pat dry again.
  3. Add potatoes to a bowl and toss with the rest of the ingredients.
  4. Spread evenly on a baking sheet.
  5. Roast for 30 minutes or until they are tender and cooked through.
  6. Broil on low for 5 minutes to slightly brown.
  7. Garnish with fresh rosemary if desired.
  8. Enjoy!
