Slow Cooked Beef Cheeks

A wonderfully rich and flavorful dish that will melt in your mouth.

Ingredients

  • 2 lb beef cheeks (can have multiple smaller pieces)
  • 1 onion (diced)
  • 4 garlic cloves (minced)
  • 8 stems fresh thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 2 cups red wine (cabernet sauvignon or merlot)
  • 1 cup beef stock

Directions

  1. In a small bowl combine the dry spices. Set aside.
  2. Cut off any large fatty sections of the meat (they will not be used).
  3. Sprinkle the spices all over the meat.
  4. Place the beef cheeks in the slow cooker.
  5. Add in the thyme, garlic, onion and beef stock.
  6. Pour the wine into a pot on high heat. Bring to a simmer for 1 minute.
  7. Once the wine has cooked out a bit, add it into the slow cooker.
  8. You can also add any additional vegetables you may want to cook. *optional*
  9. Cover and cook on low high for 6-8 hours.
  10. When done, the beef cheeks will smell amazing and the meat will be super tender.

Ingredients

  • 1 lb steak (skirt or flank)
  • 1 onion (diced)
  • 1 tablespoon arrowroot or tapioca powder
  • 1 teaspoon sesame oil
  • 3 garlic cloves (minced)
  • ½ cup coconut aminos
  • 1 tablespoon apple cider vinegar
  • 1 teaspoons fish sauce
  • ½ cup beef broth
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 tablespoons avocado oil

Directions

  1. Slice the steak into small pieces. Add to a large bowl.
  2. Sprinkle with salt, pepper, and arrowroot. Toss to coat.
  3. Heat the avocado oil in a skillet over medium-high heat.
  4. Add the steak in a single layer to the pan, you may need to work in batches.
  5. Sear the steak a few minutes on each side until it forms a deep brown crust.
  6. Transfer the cooked steak to a plate and set aside. Repeat with the rest of the steak.
  7. Add the garlic and sesame oil to the skillet. Cook for 1 minute while stirring.
  8. Pour in the beef broth and bring to a simmer. Let it simmer for about 2 minutes.
  9. Return the steak to the skillet. Stir in the rest of the ingredients.
  10. Bring the sauce to a simmer again. Cook until the sauce has thickened, stirring often.
  11. Accompany with cauliflower fried rice.

Beef and Broccoli

A classic Asian-inspired dish.

Ingredients

  • 1 lb flank steak (thinly sliced)
  • 4 cups broccoli florets
  • 4 scallions (sliced)
  • 1 tablespoon sesame seeds
Marinade
  • ¼ cup coconut aminos
  • ½ teaspoon salt
  • ¼ cup sesame oil
  • 1 teaspoon arrowroot or tapioca flour
  • ¼ teaspoon baking soda
Sauce
  • 2 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh garlic (minced)
  • 1 teaspoon arrowroot or tapioca flour
  • ½ teaspoon fish sauce

Directions

  1. In a large bowl add all the items for the marinade. Toss in the meat until it is fully coated. Allow to marinate for 10-15 minutes while you prep or overnight.
  2. Preheat the oven to 425F (220C).
  3. In a small bowl, mix together the sauce. Add in the broccoli and coat fully with the sauce.
  4. Take out a large sheet pan and add the broccoli in a single layer.
  5. Using tongs, add the marinated beef to pan with broccoli. You may need to use a second pan.
  6. Place on the tray in the oven and bake for 10-15 minutes, until the steak is done to your liking and broccoli is just tender.
  7. Remove the pan from the oven. Add the scallions and sesame seeds to garnish.
  8. Accompanies well with the Cauliflower Fried Rice.

Beef Brisket

A slow cooked meal worth the wait.

Ingredients

  • 1½ lbs brisket (fat trimmed)
  • 4 cups beef stock
  • 6 garlic cloves
  • 2½ tablespoons avocado oil
  • 2 tablespoons bbq coconut amino sauce (niulife)
  • 2 cups onions (sliced)
  • 1 teaspoon salt
  • 1 tablespoon fish sauce (niulife)

Directions

  1. Rinse the brisket and place into a slow cooker.
  2. Add the beef stock, garlic cloves, avocado oil, onions, salt and fish sauce to the slow cooker.
  3. Cover with lid and program the slower cooker for 4-5 hours on high or 7-8 hours on low.
  4. Keep brisket in juice if not serving right away.
  5. Carve the brisket against the grain.
  6. Transfer to serving platter and mix in the bbq sauce.
  7. Enjoy!

Ingredients

  • 3½ lbs beef (top sirloin cap, rump cap)
  • 1½ tablespoons salt
  • 1 teaspoon avocado oil

Directions

  1. Rinse steak and pat dry.
  2. Lay flat on cutting board width-wise with the fat layer on top.
  3. Measure about one inch from the end and cut through to get your first piece.
  4. Place aside. Repeat until the entire steak is cut up.
  5. Heat avocado oil in a skillet over medium-high heat. Meanwhile add salt to the steak pieces.
  6. Add steaks to pan and sear on both sides until they are cooked to your preference.
  7. Serve with you favorite side dish.

Directions

  1. Heat avocado oil in a skillet over high heat.
  2. Add the ground beef and cook with the garlic.
  3. Meanwhile combine the coconut aminos with sesame oil in a small bowl.
  4. Add the mixture to the beef and the reduce heat to medium-low to simmer for a few minutes.
  5. Top with sesame seeds and/or chives.
  6. Serve with lettuce wraps or on its own.
