Prosciutto Scrambled Eggs
An interesting take on a breakfast favorite.
- 4 large eggs
- 1 tablespoon avocado oil
- 1 cup prosciutto (cooked)
- 2 cups breakfast potatoes (avoid if keto or paleo)
Heat avocado oil in a pan over medium-high heat.
- Break the eggs into a small bowl and whisk thoroughly.
- Add to the pan and scramble.
- Crumble prosciutto and add some to the pan. Scramble with the eggs.
- Plate and add the rest of the crumbled prosciutto on top.
- Accompany with breakfast potatoes.
